"Nacho" Your Regular Nachos

My husband, Jim, is doing the Keto plan. I've already shared my thoughts on Keto, but if you missed that, you can read it here. 😁Here is a recipe that I made last night that was pretty tasty, super easy, and just let me use what I had in the fridge! πŸ™ŒπŸ» I used to always follow a recipe, and I still do the majority of the time. But I absolutely LOVE the "throw-it-all-in-a-bowl" type of recipes.

I had some grass fed ground beef that needed to be cooked, which was my inspiration. I am a Texan 🌡, so I decided to go with a Mexican flare because you can't go wrong there. πŸ‡²πŸ‡½ I keep a jar of homemade clean taco seasoning (again easy and tasty!), and added 2 TBSP to my meat. I needed a base for my nachos. If you are doing Keto and you haven't tried making Parmesan chips, then you are missing out! You just put fresh Parmesan cheese that has been grated on parchment paper on a cookie sheet and bake at 425 degrees for 6 minutes. Let them cool and they will be like a chip or tostada! πŸ˜‹

You can season them before cooking if you prefer, but I like the Parmesan flavor. Then I just looked for veggies in my fridge that needed to be eaten πŸ… 🌢, and added a TBSP of ghee butter (Keto!) and sauteed them after the meat had browned. So the cheese was on the bottom, then the meat and veggies, and then I topped it off with some fresh avocado πŸ₯‘. It was delicious!
