Looking for an easy snack idea?
Whenever we have a birthday at bootcamp, I like to bring different treats to camp - like hookies ("healthy cookies"), energy bites, protein balls, etc. 🎉 SO, if you're looking for a quick snack or dessert that satisfies your sweet tooth and still offers some health benefits (protein, fiber, etc), here's a simple recipe that's easy to whip up! Just mix the following ingredients, form into little balls and refrigerate or freeze. Enjoy!
Ingredients:
1/2 cup natural peanut butter (I like the ones that are just 1-2 ingredients - peanuts and possibly salt)
1/3 cup honey
1 tsp. vanilla extract
2/3 cup toasted, sweetened shredded coconut (you can also use unsweetened coconut)
1/2 cup ground golden flaxseed meal
6 TB chocolate chips (I like to use the Enjoy Life mini chips)
