Sweet and Salty Energy Bites!

If you have been in my boot camps the last few years, or you know me personally, then you know I love to make healthy energy balls. They satisfy my sweet tooth and give me a great nutritional boost! Here is the way I adapted one of my favorites. The original recipe was a little sweet for me, and I also wanted to add some more fiber.

No-Bake Sweet and Salty Balls

Ingredients:

  • 2 3/4 cup rolled oats

  • 3/4 cup unsweetened, flaked coconut

  • 1/2-1 Tbsp ground flax

  • 1 Tbsp chia seeds

  • 1/2 cup honey

  • 1/2 cup coconut oil

  • 1 cup almond butter

  • 6 Tbsp carob powder (or cocoa powder)

  • 2 tsp vanilla extract

  • Optional Toppings: crushed peppermint or coconut sugar, pink or white sea salt

 

Directions:

  1. Mix the oats, coconut, flax seeds, and chia seeds in a large bowl.

  2. Combine the honey, coconut oil, almond butter, and carob powder in a pot over low heat until melted. Remove and add vanilla

  3. Add the dry mixture to the liquid and stir until it is all combined and thick.

  4. Drop by spoonfuls into little balls and freeze for 20 min or more.

  5. Let thaw 5 min before eating.
