Plus, the recipe is great for Whole 30, Keto, Vegetarian if omit the meat, or just an overall lean and healthy dinner! It can be a little time consuming if you chop all your own vegetables, but the stores are so good now about having pre-cut vegetables that you could buy those and have minimal effort.
Roasted Chicken Sausage and Vegetables - 6 Servings
1 lb Chicken and Apple Sausage, sliced into rounds (no artificial ingredients, nitrate & hormone free)
1 butternut squash, peeled and chopped
1/2 lb fresh green beans, tips removed and cut into thirds
1 red pepper, chopped
1 yellow pepper, chopped
1 orange pepper, chopped
1 tsp dried thyme
2 tsps basil
1 tsp garlic powder
1 Tbsp dried oregano
1/4 tsp crushed red pepper flakes
Salt and pepper to taste
1/4 cup extra virgin olive oil
Preheat the oven to 420. In a large bowl, mix all of the spices and the olive oil. Add the other ingredients and toss until well mixed. Line 1 or 2 large cookie sheets with parchment paper and place meat and veggies on top. Roast for 20 min, then stir. Roast for another 20 min or until sausage has browned and the vegetables are tender.
You can eat this by itself, or add it to a bowl of salad, cooked cauliflower rice, or brown rice or quinoa. Your meal will be done and your whole family will love it! Yum!
