The Little Things Affect the Big Things



It's a rainy day in Austin and I HAVE to do my taxes TODAY! I am out of time. Procrastination has reached its peak. So I have been trying to self motivate all day. I started off asking some friends to ask Jesus to give me clarity and focus. I organized my piles and got everything ready. Then I did a workout to get my happy endorphins up. Time for Lunch! What do you do when you have a lot of tasks and it is time to eat? You want to grab something quick, right? I do too, but I know from experience that it also needs to be nourishing and eaten in a relaxing environment. Since I am working from home today, I have a lot of choices.

Thankfully, I have one of my favorite go-to healthy comfort foods,*chicken taco soup. It's perfect for a rainy day, and I usually can make it from what I have in the house. Setting my table with a nice view and some flowers helps me feel good about myself and my environment. We get so busy in life that we forget that food is an appropriate pleasure that helps us be the best in our other activities. Take time to care for yourself and see if your productivity increases as well! (hold me accountable and ask me if I got my taxes done 🤪).

Chicken Taco Soup in the Instapot:

  • 3 Chicken Breasts

  • Taco Seasoning (I make my own and keep on hand)

  • Olive Oil spray

  • 1 cup organic chicken broth

  • 1 can black beans (rinsed and drained)

  • 1 can kidney beans (rinsed and drained)

  • 1 1/2 cups fresh salsa

  • 1 cup quinoa

  • 1 cup white or brown rice

  • Optional Toppings of red onions, avocados, cheese, sour cream

You can make this on the stove, crockpot, or Instapot. I sprayed my Instapot with olive oil, seasoned the chicken breasts with taco seasoning, then sauteed them 3 minutes on each side. Next I put in 1/2 cup chicken broth and layered the rest of the ingredients, and topped it off with the rest of the chicken broth. I set the IP on poultry for 15 min, and let the sealer release naturally afterwards. It was delicious!
